2011 Mosaic Of Dreams
Travelling through Marseille, the gateway to the Southern Rhone, I remember climbing a gnarly, marbled hillside with wild rosemary and sage peeling out of the sides of the hills. Stunted nearly bonsai-esqe Cyprus and ancient olives clinging to the stony cliffs. It's a wizened landscape amplified by aromas of the wild. As much as I look forward to climbing that hill again, I delight in our region, where we too covet our ancient landscape and soils. Even better, I can curl my toes in our beach sand just 10 minutes from the winery.
Aromas roll with jewelled tones of preserved pomegranate and poached quince liquor. The dark edge of spice beckons: black cardamom, tonka bean vanilla over tobacco with lashings of clove and cassia buds with their spiced floral notes. The exotics of the spice cabinet follow: crushed Szechwan and white pepper, star anise and one solitary cardamom pod. Beguiling, heady floral aromatics magnolia, orange blossom and hints of exotic ylang-ylang amplify the allure. Tart Campari with a twist of orange. A succulent edge of ice plant foraged in the morning – slightly tart with the ephemeral notes of sea spray then the lift of sweet notes of walnut and sandalwood.
Finely detailed with cascades of flavour that echo the aromas. The complex flavours are punctuated by a fresh red currant burst of acidity and the delicate spice of the nasturtium flower. The sense of a campsite set among the natural shadow of the flinders: ancient geology surrounded by fireworks of stars and the smouldering char of the campfire. So much mid-palate weight and fine, white tea tannins, the emphasis is on texture and freshness over fullness, it refuses to fade. You’ll want to go back and back and back again, that's the additive charm, the attraction that consumes you.
The moment we sit down to contemplate the notes prior to release marks a high point in the year: a culmination of vision and vintage that is now real; it’s the soul of what we do. Crafting
the Icon wines has been an exercise in patience and a realisation of experience: until now these wines have only existed my mind’s eye. They have had the luxury of extended barrel and
bottle maturation through a slow and ever so gentle oxidation process, seamlessly integrating the characters of each variety. Here I go blotting paper again...
