Every winter I work with my family friends the Thorpe's to create and cure salami. There exists a genuine parallel between dry aging, homemade salami and our journey with these wines: months of anticipation for the consummate reward. To find the perfect balance we break out the cast iron skillet and sear off a morsel of salami stuffing spiked with foraged wild fennel and thyme. The mélange of herbs and spices lift over wisps of flame. The layers of flavours prelude what's to come after months in the bunker.
It's the captivating layers that make this wine so engaging. Plunder the drying bunker where our salumi hangs patiently from the timber beams amongst the salt cured olives, crates of winter citrus and bales of hay. Succulent semi dried cherries – the flesh without the sugar. Holy Nelly the spices come next: the pungent union of an orange and clove spiked pomander – tie it up with a ribbon, the aromas are near eternal.
Settle into a time worn leather chesterfield sofa surrounded by reclaimed, walnut timber floorboards. Dark, comforting with a fine masculine tannin line. Don't miss the herbs: thyme, sage and fronds of wild fennel. The darkest chocolatier. Then picture hunting white truffles with the hounds and the hogs in the hazelnut and willow forests of Northern Italy. The faint tones of forest floor and turned earth. The warming of the ouzo effect finishes the odyssey.
Tempranillo sets the framework enveloped by the finesse and florals of Grenache. Plunge head first into the heady potpourri of a Parisian flower market. It's all about romancing the heart.
The moment we sit down to contemplate the notes prior to release marks a high point in the year: a culmination of vision and vintage that is now real; it’s the soul of what we do. Crafting the Icon wines has been an exercise in patience and a realisation of experience: until now these wines have only existed my mind’s eye. They have had the luxury of extended barrel and bottle maturation through a slow and ever so gentle oxidation process, seamlessly integrating the characters of each variety. Here I go blotting paper again...
